Cornwall’s first five-course vegetarian menu of its kind will even tempt meat eaters. New signature five-course vegetarian tasting menu using the finest locally-sourced ingredients. Combined with Italian-style dishes served with a Cornish twist. The restaurant has launched at Fifteen Cornwall at Watergate Bay near Newquay.
Created by head chef Adam Banks, the new vegetarian tasting menu, the first of its kind in Cornwall, is a continuation Adam’s ‘root-to-tip’ philosophy. He aims to make use of the whole plant to reduce food waste. He believes that vegetables should have as much importance in dishes as their fish and meat counterparts.
His “waste not want not” approach to vegetables, sees him make pesto out of carrot tops. He also blanch baby leeks with their roots and tops intact, and make sauces from male courgette flowers.
Guests can expect seasonally inspired dishes, such as braised celeriac steak with girolle mushrooms, kale, hazelnuts and wild garlic oil. Served with a luxurious freshly pastas or risotto, a variety of seasonal vegetables and leaves combined with fruit, pulses, nuts and grains. All complemented with cheeses from Cornwall, the South West and Italy.
The menu includes antipasto, insalata, primi and a choice of two options for both secondi and dolci with coffee and cioccolatini to finish. Vegan variations of the tasting menu are also available – with additional options also available on our a la carte menu.
Adam works closely with local suppliers whose passion and dedication to growing and rearing high quality produce is celebrated in the innovative, experimental dishes he creates.
The new five-course vegetarian tasting menu will sit alongside Fifteen’s signature tasting and a la carte offerings. The restaurant has also introduced a new all-day dining menu offering a variety of small and large plates, designed to share.
